Jaffa Whoopie Pies

Whoopie pies are a genius dessert that are basically a cake-sandwich biscuit. So if you like cakes and you like biscuits sandwiched with fillings (like oreos, monte carlos, etc) then it's worth giving these a try!

The original recipe was

Ingredients... (makes 16 pies)

½ cup self-raising flour
½ cup plain flour
½ cup cocoa powder
90gr caster sugar
90ml extra light olive oil
2 eggs
90ml butter milk
½ granny smith apple, peeled, cored & grated finely

For the filling...
90gr Philadelphia cream cheese
1 tsp finely grated orange rind
½ tsp orange essence*
1 Tbs icing sugar

Method...

  1. Preheat oven to 180°C/160°C fan-forced. Line 2 large baking trays with baking paper.
  2. Sift flours and cocoa into a large bowl. Add sugar. Stir to combine.
  3. Place oil, eggs and buttermilk in a medium bowl. Whisk to combine. Add oil mixture and apple to flour mixture. Stir until just combined.
  4. Drop 1 level tablespoon of mixture, 4cm apart, on prepared trays (you should be able to get 16 pies on each tray)
  5. Bake, 1 tray at time, for 8 to 9 minutes or until cakes spring back when lightly pressed. Stand on tray for 5 minutes. Transfer to a wire rack to cool.
  6. Combine cream cheese and orange rind with orange essence and icing sugar
  7. Sandwich 2 teaspoons cream mixture between cakes to make 16 whoopie pies. Dust with icing sugar to serve.
*If you want naughty pies you can use orange liquor instead of essence
