Coconut rice


You will need
1 x 165ml tin of coconut milk
3/4 cup basmati or jasmine rice
1 cup water
pinch salt

Method

  1. Rinse and drain rice under cold water
  2. Combine coconut milk and water in a heavy based saucepan and bring to a simmer
  3. Add rice and salt, allow to come to the boil then cover with a lid and place on a very low heat for 10 minutes. Turn off heat and set aside for 5 minutes.
  4. Serve
